Ingredients
  

1 large head of cauliflower, cut into florets

4 cloves garlic, minced

1/2 cup cream cheese, softened

1/4 cup sour cream

1/4 cup grated Parmesan cheese

2 tablespoons unsalted butter

Salt and pepper, to taste

Fresh chives, chopped (for garnish)

Instructions
 

Prepare the Cauliflower: Place the cauliflower florets and minced garlic into a large pot. Add enough water to cover the cauliflower slightly and bring to a boil. Season with salt.

    Cook Until Tender: Reduce heat to medium and let the cauliflower simmer for 10-12 minutes or until the florets are fork-tender.

      Drain and Dry: Carefully drain the cauliflower in a colander and allow it to sit for a couple of minutes to remove excess moisture.

        Blend the Mixture: In a food processor or using an immersion blender, combine the drained cauliflower, minced garlic, cream cheese, sour cream, and butter. Blend until smooth and creamy.

          Add Cheese and Seasoning: Stir in the grated Parmesan cheese, and season with salt and pepper to taste. Blend again briefly to combine.

            Serve: Transfer the creamy cauliflower mash to a serving bowl. Garnish with finely chopped chives and an extra drizzle of melted butter if desired.
