Creamy Chicken Lasagna with White Sauce

Ingredients
  

9 lasagna noodles

2 cups cooked chicken, shredded

2 cups ricotta cheese

2 cups mozzarella cheese, shredded

1 cup Parmesan cheese, grated

1/4 cup fresh basil, chopped

2 cups baby spinach

3 cups béchamel sauce (see below for recipe)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

Olive oil for greasing

Béchamel Sauce:

4 tablespoons unsalted butter

4 tablespoons all-purpose flour

4 cups milk

1 teaspoon salt

Freshly ground nutmeg (to taste)

Instructions
 

Prepare the Béchamel Sauce:

    - In a medium saucepan, melt the butter over medium heat.

      - Add the flour and whisk continuously for about 2 minutes until lightly golden.

        - Slowly add the milk while whisking to prevent lumps.

          - Cook on medium heat, stirring constantly until the sauce thickens (about 10 minutes).

            - Season with salt and a pinch of nutmeg. Remove from heat and set aside.

              Preheat Oven:

                - Preheat your oven to 375°F (190°C).

                  Boil the Lasagna Noodles:

                    - Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on parchment paper to prevent sticking.

                      Assemble the Lasagna:

                        - Grease a 9x13 inch baking dish with olive oil.

                          - Start with a layer of béchamel sauce at the bottom.

                            - Place 3 lasagna noodles on top of the béchamel sauce.

                              - Spread half of the shredded chicken over the noodles, followed by half of the ricotta cheese, half of the spinach, and a sprinkle of basil.

                                - Add another layer of béchamel sauce and 1/3 of the mozzarella cheese.

                                  - Repeat the layers (3 noodles, chicken, ricotta, spinach, basil, béchamel, and mozzarella).

                                    Final Layer:

                                      - Place the remaining 3 noodles on top, cover with the last of the béchamel sauce, and sprinkle the remaining mozzarella and all of the Parmesan cheese on top.

                                        Bake:

                                          - Cover the dish with aluminum foil (to prevent over-browning) and bake in the preheated oven for 25 minutes.

                                            - Remove the foil and bake for an additional 15 minutes, or until golden and bubbly.

                                              Rest and Serve:

                                                - Remove the lasagna from the oven and let it rest for 10-15 minutes before slicing. Serve warm, garnished with additional basil if desired.
