8 oz (225 g) fettuccine or pasta of choice

2 boneless, skinless chicken breasts, diced

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves, for garnish

Lemon wedges, for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the rest and set aside.

    Sauté the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the diced chicken breasts, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.

      Make the Sauce: In the same skillet, add the chopped onion and sauté for 2-3 minutes until translucent. Then add the minced garlic and cook for another minute until fragrant.

        Add Tomatoes and Cream: Toss in the cherry tomatoes and cook until they start to soften, about 2-3 minutes. Pour in the heavy cream, followed by the Parmesan cheese, Italian seasoning, and red pepper flakes. Stir to combine and let it simmer for about 3-4 minutes until the sauce thickens slightly.

          Combine: Return the cooked chicken to the skillet. If the sauce is too thick, gradually add the reserved pasta water until desired consistency is reached. Gently toss in the cooked fettuccine and ensure it is well coated with the creamy sauce. Taste and adjust seasoning if necessary.

            Serve: Plate the creamy chicken pasta, garnish with fresh basil leaves, and serve with lemon wedges on the side for an extra burst of flavor.
