Ingredients
  

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

1 red bell pepper, chopped

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon sugar

Salt and pepper, to taste

1 cup heavy cream

1 cup canned chickpeas, drained and rinsed

Fresh basil leaves, for garnish

Crusty bread, for serving

Instructions
 

Sauté the Vegetables: In a large pot over medium heat, add the olive oil. Once hot, add the chopped onion, garlic, carrot, celery, and red bell pepper. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are soft and the onion is translucent.

    Add the Tomatoes and Broth: Stir in the crushed tomatoes, vegetable broth, dried basil, dried oregano, sugar, and season with salt and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes to allow the flavors to meld.

      Blend for Creaminess: After simmering, use an immersion blender to partially blend the soup, leaving some chunky bits for texture. If you don’t have an immersion blender, carefully transfer about half the soup to a blender, blend until smooth, and then return it to the pot.

        Add Cream and Chickpeas: Stir in the heavy cream and chickpeas, heating through for another 5 minutes. Adjust seasoning if needed.

          Serve: Ladle the creamy chunky tomato soup into bowls, garnish with fresh basil leaves, and serve with crusty bread on the side.
