  • 4 large russet potatoes peeled and cut into 1-inch cubes
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 4 cups vegetable broth or chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk or 2% milk
  • 1 cup sharp cheddar cheese grated
  • 4 slices bacon cooked until crispy and crumbled (optional)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Fresh chives or parsley chopped, for garnish

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté for about 5 minutes until soft.
  • Incorporate minced garlic and sauté for 1-2 minutes until fragrant.
  • Add diced potatoes and pour in broth, bring to a boil, then simmer for 15-20 minutes until tender.
