  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon extra virgin olive oil
  • 2 cups low-sodium chicken broth
  • 1 cup whole milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 2 cups shredded mozzarella cheese

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add diced chicken, season with salt, pepper, garlic powder, onion powder, and Italian seasoning, and sauté for 5-7 minutes until golden brown.
  • Stir in elbow macaroni, chicken broth, and milk, mixing well.
  • Bring the mixture to a gentle boil.
  • Reduce heat to low, cover, and simmer for 8-10 minutes until pasta is al dente and most liquid is absorbed.
  • Remove from heat and fold in mozzarella and Parmesan cheeses until melted.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh chopped basil.

Notes
