Ingredients
  

4 boneless, skinless chicken breasts

1 cup homemade or store-bought pesto

1 cup heavy cream

1 cup cherry tomatoes, halved

2 tablespoons olive oil

3 cloves garlic, minced

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Preheat the oven to 400°F (200°C).

    Prepare the tomatoes: On a baking sheet, toss the halved cherry tomatoes with olive oil, salt, and pepper. Roast in the oven for about 15 minutes, or until they are blistered and soft.

      Cook the chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through. Remove from the skillet and set aside.

        Prepare the creamy pesto sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the pesto and Parmesan cheese, mixing until smooth. Let it simmer for a few minutes until it thickens slightly.

          Combine: Return the cooked chicken to the skillet, spooning the creamy pesto sauce over the chicken. Let it cook for an additional 2-3 minutes, allowing the flavors to meld together.
