4 boneless, skinless chicken thighs

2 cups long-grain white rice

1 medium onion, diced

4 cloves garlic, minced

1 can (14 oz) coconut milk

2 cups chicken broth

1 cup frozen peas

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon dried thyme

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken thighs with paprika, salt, and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and sear for about 5-7 minutes per side until golden brown. Remove the chicken from the skillet and set aside.
