Ingredients
  

  • 12 pieces lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach chopped
  • 2 cups mushrooms thinly sliced
  • 3 cloves garlic minced
  • 2 cups heavy cream
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the lasagna noodles according to package directions until al dente, then drain and set aside.
  • In a large skillet, heat olive oil over medium heat, add garlic and mushrooms, and sauté for about 5 minutes until soft.
  • Stir in chopped spinach and cook until wilted, seasoning with salt, pepper, and oregano.
  • In a bowl, combine ricotta cheese, 1 cup mozzarella, and half of the Parmesan until creamy.
  • Warm heavy cream in a saucepan, stir in remaining Parmesan until melted, and adjust seasoning.
  • In a baking dish, spread a layer of creamy sauce, layer 4 noodles, half of the ricotta mixture, half of the vegetables, and a third of the sauce; repeat.
  • Finish with remaining noodles, pour the last of the sauce, and sprinkle remaining mozzarella on top.
  • Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15 minutes until golden brown.
  • Let cool for 10 minutes before slicing and garnish with fresh basil.

Notes

Allow the lasagna to rest before slicing for cleaner cuts.
