Ingredients
  

  • 12 oz fettuccine or penne pasta
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic finely minced
  • 14 oz crushed tomatoes
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Salt to taste
  • freshly ground black pepper to taste
  • Fresh basil leaves for garnish
  • Additional Parmesan cheese for serving

Instructions

  • Bring a large pot of salted water to a boil and cook the pasta until al dente, then drain and reserve 1 cup of pasta water.
  • Heat olive oil in a skillet over medium heat, add minced garlic, and sauté until fragrant.
  • Add crushed tomatoes, oregano, and red pepper flakes to the skillet, and simmer for 5-7 minutes.
  • Lower heat and stir in heavy cream, simmering for an additional 5 minutes.
  • Combine the drained pasta with the sauce, adding reserved pasta water if needed.
  • Mix in freshly grated Parmesan cheese until melted and creamy.
  • Serve garnished with fresh basil and extra Parmesan cheese.
