  • 2 medium carrots peeled and diced
  • 1 medium red bell pepper diced
  • 1 can 14 oz diced tomatoes, including juices
  • 1 can 15 oz white beans (cannellini or navy), drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • to taste salt and freshly ground black pepper
  • 1 cup full-fat coconut milk
  • to taste red pepper flakes optional
  • to taste fresh parsley chopped (for garnish)

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the finely diced onion and sauté for about 5 minutes until soft.
  • Incorporate the minced garlic, diced carrots, and red bell pepper, sauté for another 5-7 minutes.
  • Add the canned diced tomatoes, white beans, vegetable broth, dried basil, oregano, smoked paprika, salt, and pepper.
