1 lb chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

Oil for frying

For Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 tbsp Sriracha (adjust for spice level)

1 tbsp honey

1 tsp lime juice

Marinate Chicken: In a bowl, combine chicken pieces with buttermilk. Let marinate in the refrigerator for at least 30 minutes (or up to overnight for juicier chicken).

    Prepare the Breading: In a separate bowl, mix the flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper.

      Coat Chicken: Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating. Press the flour onto the chicken for extra crispiness.

        Heat Oil: In a deep skillet or frying pan, heat 2-3 inches of oil over medium-high heat until it reaches 350°F (175°C).

          Fry Chicken: Carefully place the coated chicken pieces in the hot oil, working in batches if necessary. Fry for 5-7 minutes or until golden brown and crispy. Use a slotted spoon to transfer the chicken to a paper towel-lined plate to drain excess oil.

            Prepare Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice until smooth and well combined.

              Serve: Toss the crispy chicken pieces in half of the Bang Bang sauce, or serve the sauce on the side for dipping. Garnish with chopped green onions or sesame seeds if desired.
