Ingredients
  

2 cups cooked shredded chicken

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1/4 cup diced green onions

1/2 cup diced bell peppers (red or green)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil or butter, for frying

Sour cream, for serving

Fresh salsa, for serving

Guacamole, for serving

Instructions
 

Prepare the Filling:

    - In a large mixing bowl, combine the shredded chicken, cheddar cheese, mozzarella cheese, cream cheese, diced green onions, diced bell peppers, garlic powder, onion powder, cumin, paprika, salt, and pepper. Mix until well combined.

      Assemble the Quesadillas:

        - Place one flour tortilla on a flat surface. Spread about 1/4 of the chicken and cheese mixture evenly over half of the tortilla. Fold the tortilla over to create a half-moon shape.

          Cook the Quesadillas:

            - Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Once hot, carefully place the quesadilla in the skillet. Cook for 3-4 minutes on one side until golden brown and crispy.

              Flip and Finish Cooking:

                - Gently flip the quesadilla using a spatula and cook the other side for another 3-4 minutes until the cheese is melted and the tortilla is crispy. Remove from the skillet and repeat with the remaining quesadillas, adding more oil or butter as needed.

                  Cut and Serve:

                    - Allow the quesadillas to cool for a minute before cutting them into wedges. Serve with sour cream, fresh salsa, and guacamole on the side.
