Ingredients
  

  • 2 cups cooked macaroni pasta
  • 2 cups shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese
  • ½ cup cream cheese softened
  • ½ cup breadcrumbs
  • ¼ cup finely chopped green onions
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • 2 large eggs beaten
  • 1 cup all-purpose flour
  • Vegetable oil for frying

Instructions

  • In a large bowl, combine macaroni, cheddar, Parmesan, cream cheese, breadcrumbs, green onions, garlic powder, onion powder, salt, and pepper.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
  • Roll about 2 tablespoons of the mixture into balls.
  • Prepare three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  • Roll each ball in flour, dip in eggs, and coat with breadcrumbs.
  • Heat 2 inches of vegetable oil in a skillet to 350°F (175°C).
  • Fry the balls in batches for 3-4 minutes until golden brown.
  • Remove with a slotted spoon and drain on paper towels.
  • Serve warm, optionally with marinara sauce or ranch dressing.
