  • 4 pieces boneless skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • ½ cup panko breadcrumbs
  • ½ cup honey
  • ½ cup BBQ sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • cooking spray or olive oil for drizzling
  • 1.5 pounds baby potatoes
  • 4 tablespoons Greek yogurt
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian herbs
  • salt and pepper to taste
  • fresh parsley chopped for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a shallow bowl, mix whole wheat breadcrumbs, panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  • Blend honey and BBQ sauce in another bowl until smooth.
  • Dip each chicken breast into the honey BBQ mixture, then coat with the breadcrumb mixture.
  • Arrange coated chicken on a baking sheet lined with parchment paper.
  • Lightly spray chicken with cooking spray or drizzle with olive oil.
  • Bake for 25-30 minutes until fully cooked and golden brown.
  • Boil salted water in a large pot and cook halved baby potatoes for 10-15 minutes until fork-tender.
  • Drain potatoes and return to the pot, then mix Greek yogurt, Parmesan cheese, minced garlic, olive oil, dried herbs, salt, and pepper.
  • Pour the creamy mixture over the potatoes and toss gently to coat.
