4 boneless chicken thighs

1 cup feta cheese, crumbled

1/4 cup hot honey (store-bought or homemade)

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prep Chicken: Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels and season both sides with salt, pepper, smoked paprika, garlic powder, and onion powder.

    Set Up Breading Station: In one bowl, place the flour. In a second bowl, add the beaten eggs. In a third bowl, combine the panko breadcrumbs with half of the crumbled feta cheese and a drizzle of olive oil for extra crispiness.

      Coat the Chicken: Dip each chicken thigh first into the flour, shaking off excess, then into the egg, and lastly into the panko mixture, pressing gently to ensure the breadcrumbs adhere well.

        Sear the Chicken: Heat a large oven-safe skillet over medium-high heat and add olive oil. Once the oil is hot, add the breaded chicken thighs. Sear for about 3-4 minutes on each side until they are golden brown.

          Bake and Add Feta: Once seared, remove the skillet from heat. Drizzle the remaining hot honey over the chicken thighs and sprinkle the rest of the feta cheese on top.

            Finish in the Oven: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

              Garnish and Serve: Remove from the oven, let cool for a few minutes, then garnish with chopped fresh parsley and an additional drizzle of hot honey if desired.
