Ingredients

2 large chicken breasts

1 cup whole wheat flour

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

2 large eggs

1 cup panko breadcrumbs

1 cup crumbled feta cheese

1 tablespoon olive oil

¼ cup hot honey (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Chicken: If the chicken breasts are thick, butterfly them or pound them gently to ensure even cooking.

Set Up Breading Stations: In a shallow bowl, mix the flour, garlic powder, paprika, salt, and black pepper. In a second bowl, beat the eggs. In a third bowl, place the panko breadcrumbs mixed with crumbled feta cheese.

Coat the Chicken: Dredge each chicken breast in the seasoned flour, shaking off excess. Dip into the beaten eggs, then coat thoroughly with the feta panko mixture, pressing gently to adhere.

Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the coated chicken breasts and cook for 2-3 minutes on each side until golden brown.

Bake to Finish: Transfer the chicken to the prepared baking sheet. Drizzle a little hot honey over each piece. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C).

Serve: Remove from the oven and drizzle with more hot honey if desired. Garnish with fresh parsley and serve with lemon wedges for an extra zing. Enjoy!
