  • 2 large sweet onions
  • 1 cup all-purpose flour

  • 1 teaspoon paprika

  • 1 cup buttermilk
  • 1 cup panko breadcrumbs

  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic
  • Salt and black pepper to taste

Instructions

  • Peel the onions and slice them into ¼-inch thick rings.
  • In a bowl, combine flour, baking powder, paprika, garlic powder, salt, and black pepper.
  • Whisk in the buttermilk until smooth.
  • Dip each onion ring into the batter, allowing excess to drip off.
  • Roll the battered rings in panko breadcrumbs until fully coated.
  • Heat oil in a deep skillet to 350°F (175°C).
  • Fry onion rings in batches for 2-3 minutes on each side until golden brown.
