Ingredients
  

2 salmon fillets (6 oz each)

1 cup sushi rice

1 1/4 cups water

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon honey

1 avocado, sliced

1 cup cucumber, thinly sliced

1/4 cup pickled ginger

2 green onions, chopped

1 tablespoon sesame seeds

Salt and pepper, to taste

Fresh cilantro or microgreens for garnish (optional)

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 1 1/4 cups water. Bring to a boil, then reduce heat to low, cover, and let simmer for 20 minutes. Once done, remove from heat and let it sit covered for another 10 minutes. Fluff with a fork and set aside.

    Make the Marinade for the Salmon: In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and honey. Season with salt and pepper to taste.

      Crispy Salmon Preparation: Preheat a non-stick skillet over medium-high heat and add a splash of oil. Pat the salmon fillets dry with paper towels and season both sides with salt and pepper. Once the skillet is hot, place the salmon skin-side down. Cook for 4-5 minutes until the skin is crispy. Carefully flip the salmon, pour half of the marinade over the fillets, and cook for an additional 3-4 minutes, or until salmon is cooked to your desired doneness.

        Assemble the Rice Bowl: In a serving bowl, add a scoop of the sushi rice as the base. Slice the crispy salmon and place it on top of the rice. Arrange sliced avocado and cucumber around the salmon.

          Garnish & Serve: Drizzle the remaining marinade over the top and sprinkle with sesame seeds and chopped green onions. Add a few pieces of pickled ginger and garnish with fresh cilantro or microgreens if desired. Serve immediately and enjoy your delicious Crispy Salmon and Rice Bowl!
