  • 2 pounds bone-in skin-on chicken thighs
  • ½ cup honey
  • ¼ cup low-sodium soy sauce
  • 4 cloves garlic finely minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes optional
  • 2 pieces green onions thinly sliced

Instructions

  • In a medium mixing bowl, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, black pepper, and optional red pepper flakes. Whisk until smooth.
  • Arrange chicken thighs in the crockpot with skin side up. Pour the honey garlic sauce over the chicken, ensuring each piece is coated.
  • Cover the crockpot and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is tender.
  • Carefully lift the chicken thighs out of the crockpot and place them on a serving platter.
  • For crispy skin, broil the thighs in the oven for 3 to 5 minutes.
  • To thicken the sauce, transfer remaining sauce to a saucepan and simmer over medium heat for 5 to 10 minutes.
