2 lbs sirloin steak, cut into bite-sized cubes

4 large russet potatoes, diced

1 medium onion, diced

3 cloves garlic, minced

1 cup beef broth

1 cup sour cream

1 cup shredded cheddar cheese

1/2 cup crumbled bacon

1/2 cup chopped green onions

1 tsp paprika

1/2 tsp black pepper

1/2 tsp salt

1 tsp dried thyme

Prepare the Base: In the bottom of your crockpot, layer the diced potatoes evenly.

    Brown the Steak: In a skillet over medium-high heat, quickly sear the steak cubes for about 2-3 minutes until browned. This step is optional but adds extra flavor.

      Add the Steak: Transfer the browned steak into the crockpot on top of the potatoes.

        Sauté Aromatics: In the same skillet, add a bit of olive oil if needed, and sauté the onions and garlic until they are soft and fragrant (about 3-4 minutes) before adding them to the crockpot.

          Season and Pour: Add the paprika, black pepper, salt, and thyme, then pour in the beef broth over the mixture in the crockpot.

            Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the steak is tender and the potatoes are cooked through.

              Add the Creaminess: About 30 minutes before serving, stir in the sour cream and mix well to combine. This will make the dish creamy.

                Cheese and Bacon: Once ready to serve, top each serving with shredded cheddar cheese and crumbled bacon. Let it melt slightly before garnishing with chopped green onions.
