Ingredients
  

  • 1 pound ground turkey or beef
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 1 medium bell pepper diced
  • 1 can 15 oz pumpkin puree
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 14.5 oz diced tomatoes with green chilies
  • 2 cups vegetable or chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper optional
  • 1 cup corn
  • fresh cilantro or parsley for garnish
  • optional toppings: sour cream or Greek yogurt shredded cheese

Instructions

  • Brown the ground turkey or beef in a skillet over medium heat, then transfer to the crockpot.
  • Add diced onion, minced garlic, and bell pepper to the crockpot and mix with the meat.
  • Incorporate pumpkin puree, black beans, kidney beans, diced tomatoes, and corn into the mixture.
  • Pour in vegetable or chicken broth and stir to combine evenly.
  • Sprinkle in chili powder, ground cumin, smoked paprika, salt, black pepper, and cayenne pepper, stirring well.
  • Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  • Taste and adjust seasoning if needed, adding more broth for desired consistency.
  • Serve hot, garnished with fresh cilantro or parsley and optional toppings.

Notes

Adjust the seasoning to your taste and add more broth if the chili is too thick.
