Ingredients
  

  • 2 cups cooked shredded chicken
  • 1 cup refried beans
  • 1 cup shredded cheese
  • ½ cup diced onions
  • ½ cup diced bell peppers
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Oil for frying
  • Optional toppings: sour cream guacamole, salsa, chopped cilantro

Instructions

  • Heat oil in a skillet and sauté onions, bell peppers, and garlic for 5 minutes.
  • In a bowl, mix chicken, refried beans, sautéed vegetables, cumin, chili powder, salt, and pepper.
  • Place ¼ of the filling on a tortilla, add cheese, fold sides, and roll tightly.
  • Heat 2 inches of oil in a pot to 350°F (175°C).
  • Fry chimichangas seam-side down for 3-4 minutes on each side until golden brown.
  • Remove from oil and drain on paper towels.
  • Cut chimichangas in half and arrange on a platter.
  • Serve hot with optional toppings.
