2 medium-sized cucumbers, thinly sliced

1 large apple (any sweet variety), cored and diced

½ red onion, finely chopped

¼ cup walnuts, roughly chopped

2 tablespoons fresh mint leaves, finely chopped

3 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey (or maple syrup for a vegan option)

Start by preparing the cucumbers: Thinly slice them and place them in a large mixing bowl. If desired, you can peel the cucumbers for a milder flavor.

    Core and dice the apple into bite-sized pieces and add it to the same bowl with the cucumbers.

      Finely chop the red onion and add it to the mixing bowl.
