2 cups fresh mushrooms, sliced (button, cremini, or a mix)

1 small onion, finely chopped

2 cloves garlic, minced

6 large eggs

1 cup milk (whole or 2%)

1 cup shredded cheese (cheddar, swiss, or a blend)

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil or butter

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or quiche pan with cooking spray or butter.

    Sauté Vegetables: In a skillet, heat the olive oil or butter over medium heat. Add the onions and garlic, sautéing for about 2-3 minutes until they become translucent. Add the sliced mushrooms and sauté for another 5-7 minutes until they release their moisture and start to brown. Remove from heat and let cool slightly.

      Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk until well combined. Stir in the dried thyme, salt, and black pepper.

        Combine Ingredients: Add the sautéed mushrooms and onion mixture to the egg mixture, followed by the shredded cheese. Mix until everything is evenly distributed.

          Pour and Bake: Pour the mixture into the prepared pie dish, spreading it evenly. Bake in the preheated oven for 35-40 minutes, or until the quiche is set in the center and the top is lightly golden.

            Cool and Serve: Once baked, remove from the oven and let the quiche cool for about 10 minutes. Slice into wedges, garnish with fresh parsley if desired, and serve warm or at room temperature.
