2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

1 cup ricotta cheese

4 large eggs

1 cup milk (whole or 2%)

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon nutmeg

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup diced onions

1/2 cup shredded mozzarella cheese

Olive oil for sautéing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Onions: In a skillet, heat a drizzle of olive oil over medium heat. Add the diced onions and sauté until they are translucent and lightly golden, about 5-7 minutes. Set aside to cool slightly.

      Prepare the Spinach: If using fresh spinach, add it to the skillet with the onions for the last 1-2 minutes of cooking to wilt it slightly. For frozen spinach, ensure it is well-drained before mixing with the onions.

        Mix the Wet Ingredients: In a large bowl, whisk together the ricotta cheese, eggs, and milk until smooth.

          Add the Seasonings: Stir in the garlic powder, nutmeg, salt, and black pepper into the egg mixture.

            Combine All Ingredients: Add the sautéed onion and spinach mixture to the egg mixture. Fold in the grated Parmesan and shredded mozzarella cheese until just combined.

              Pour into a Baking Dish: Lightly grease a 9-inch pie dish or a similar-sized baking dish. Pour the mixture into the prepared dish, spreading it evenly.

                Bake the Quiche: Place the quiche in the preheated oven and bake for 35-40 minutes, or until the top is lightly golden and a knife inserted in the center comes out clean.

                  Cool and Serve: Allow the quiche to cool for 5-10 minutes before slicing. Serve warm or at room temperature.
