2 ¾ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

2 teaspoons pure vanilla extract

1 teaspoon almond extract (optional)

Colored sprinkles or icing for decoration

Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer until the mixture is light and fluffy, about 3-4 minutes.

        Add Eggs and Extracts: Add the egg, vanilla extract, and almond extract (if using) to the butter mixture. Beat well until combined.

          Incorporate Dry Ingredients: Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

            Chill the Dough: Divide the dough into two equal portions, flatten them into disks, wrap in plastic wrap, and refrigerate for at least 1 hour. This will help prevent the cookies from spreading too much while baking.
