For the Pastry:

3 cups all-purpose flour

1 teaspoon salt

1 teaspoon turmeric powder (for color)

1 cup unsalted butter, cold and cubed

6-8 tablespoons ice water

For the Beef Filling:

1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1 Scotch bonnet pepper, finely chopped (seeds removed for less heat)

1 tablespoon soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon ground allspice

Salt and pepper to taste

2 green onions, chopped

1/2 cup beef broth

Instructions
 

Make the Pastry:

    - In a large mixing bowl, combine the flour, salt, and turmeric.

      - Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

        - Gradually add in the ice water, one tablespoon at a time, mixing until the dough comes together.

          - Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

            Prepare the Filling:

              - In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spoon.

                - Add the chopped onion and garlic, sautéing until soft and fragrant.

                  - Stir in the thyme, Scotch bonnet pepper, soy sauce, Worcestershire sauce, allspice, salt, and pepper.

                    - Pour in the beef broth, reduce the heat, and simmer for about 10 minutes until the mixture thickens. Remove from heat and fold in the green onions. Let cool.

                      Assemble the Patties:

                        - Preheat your oven to 400°F (200°C).

                          - On a floured surface, roll out one disc of pastry dough to about 1/8 inch thick. Cut out circles using a large cutter or bowl (about 6 inches in diameter).

                            - Place about 2 tablespoons of the beef filling in the center of each circle.

                              - Fold the pastry over to create a half-moon shape. Seal the edges with a fork or by crimping with your fingers.

                                - Repeat with the remaining dough and filling.

                                  - Place the patties on a baking sheet lined with parchment paper.

                                    Bake the Patties:

                                      - Brush the tops of the patties with an egg wash (1 beaten egg mixed with a splash of water) for a golden finish.

                                        - Bake in the preheated oven for 25-30 minutes, or until golden brown.

                                          Serve and Enjoy:

                                            - Allow the patties to cool slightly before serving. Enjoy them warm with your favorite dipping sauce or enjoy them on their own as a tasty snack or meal!
