Ingredients
  

1 cup dulce de leche

2 cups heavy whipping cream

1 teaspoon vanilla extract

1 tablespoon gelatin powder

3 tablespoons cold water

2 large egg whites

1/4 cup granulated sugar

A pinch of salt

Optional: chocolate shavings or crushed nuts for garnish

Prepare the Gelatin: In a small bowl, sprinkle the gelatin powder over cold water and let it sit for about 5 minutes to bloom.

    Melt the Gelatin: Once bloomed, place the bowl over a double boiler or microwave for 10 seconds to melt the gelatin. Let it cool slightly but don't allow it to set.

      Mix Dulce de Leche Base: In a mixing bowl, combine the dulce de leche and vanilla extract. Stir in the melted gelatin, mixing well to incorporate.

        Whip the Cream: In a separate bowl, whip the heavy whipping cream until medium peaks form. Gently fold the whipped cream into the dulce de leche mixture until fully combined.

          Beat Egg Whites: In another bowl, beat the egg whites and salt until soft peaks form. Gradually add in the granulated sugar, continuing to beat until stiff peaks form.

            Fold Egg Whites: Gently fold the beaten egg whites into the dulce de leche and cream mixture until no streaks remain but be careful not to deflate the mixture.

              Chill the Mousse: Divide the mousse into serving glasses or bowls and refrigerate for at least 4-6 hours until set, ideally overnight.

                Serve: Before serving, garnish with optional chocolate shavings or crushed nuts for an extra touch.
