2 cups rolled oats

1 cup creamy peanut butter

1/2 cup honey or maple syrup

1/2 cup brown sugar (packed)

1/2 cup mini chocolate chips (optional)

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup chopped nuts or dried fruits (optional)

Instructions
 

In a large microwave-safe bowl, combine the creamy peanut butter, honey (or maple syrup), and brown sugar. Microwave on high for 30 seconds, then stir until smooth. If the mixture is still grainy, microwave in 10-second intervals until fully melted and combined.

    Add the rolled oats, vanilla extract, and salt to the peanut butter mixture. Stir well until the oats are completely coated.

      If you are using mini chocolate chips or any nuts/dried fruits, fold them into the mixture now.

        Line a 9x9-inch baking dish with parchment paper, allowing some overhang for easy removal later. Pour the mixture into the dish, pressing it down firmly with your hands or a spatula to ensure it is compacted.

          Microwave the pressed mixture on high for about 2 minutes. Let it cool slightly at room temperature for about 10 minutes.

            Once cooled, place the dish in the refrigerator for at least 30 minutes to set. After setting, lift the granola slab out of the dish using the overhanging parchment paper and cut into bars or squares.

              Store in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
