2 large cucumbers (preferably English cucumbers)

1 tablespoon sea salt

1 tablespoon sugar

3 tablespoons rice vinegar

1 tablespoon soy sauce (or tamari for gluten-free)

1 teaspoon sesame oil

1 garlic clove, minced

1 teaspoon freshly grated ginger

1 tablespoon sesame seeds (toasted if desired)

2 green onions, finely sliced

Fresh cilantro leaves, for garnish (optional)

Red pepper flakes, to taste (optional)

Instructions
 

Prepare the Cucumbers: Slice the cucumbers thinly (about 1/8 inch thick) and place them in a large bowl. Sprinkle with sea salt and gently toss to combine. Allow them to sit for 15-20 minutes to draw out excess water, then drain and pat dry with paper towels.

    Make the Dressing: In a separate small bowl, whisk together sugar, rice vinegar, soy sauce, sesame oil, minced garlic, and grated ginger until the sugar dissolves.

      Combine: Pour the dressing over the cucumbers and toss well to ensure all slices are coated evenly.

        Add Final Touches: Stir in sesame seeds and sliced green onions. If you like a bit of spice, add red pepper flakes to taste.

          Chill and Serve: Let the salad sit in the refrigerator for at least 30 minutes to let the flavors meld together. Just before serving, garnish with fresh cilantro leaves for an aromatic finish.
