Ingredients
  

2 medium cucumbers, thinly sliced

1/2 red onion, thinly sliced

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon grated ginger

1 clove garlic, minced

2 tablespoons sesame seeds, toasted

2 green onions, chopped

Fresh cilantro leaves for garnish

Pinch of red pepper flakes (optional for heat)

Instructions
 

In a large bowl, combine the sliced cucumbers and red onion.

    In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or maple syrup), grated ginger, minced garlic, and red pepper flakes (if using) until well combined.

      Pour the dressing over the cucumber and onion mixture. Toss gently to ensure the vegetables are well coated.

        Let the salad sit for at least 15-20 minutes at room temperature to allow the flavors to meld. If you prefer a chilled salad, cover and refrigerate for up to 1 hour.

          Just before serving, sprinkle the toasted sesame seeds and chopped green onions over the salad, and garnish with fresh cilantro.
