Ingredients

2 large cucumbers, thinly sliced

1 tablespoon salt

1 tablespoon sugar

3 tablespoons rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame seeds

2 green onions, thinly sliced

Fresh cilantro leaves for garnish (optional)

Instructions

Prepare the Cucumbers: Place the thinly sliced cucumbers in a colander and sprinkle with salt. Let them sit for about 20 minutes to drain excess moisture. Rinse and pat dry with paper towels.

Make the Dressing: In a mixing bowl, combine sugar, rice vinegar, soy sauce, sesame oil, minced garlic, and grated ginger. Whisk everything together until the sugar has dissolved.

Combine the Salad: In a large salad bowl, add the drained cucumbers. Pour the dressing over the cucumbers and toss gently to combine, ensuring all pieces are coated well.

Garnish: Add in the sesame seeds and sliced green onions, tossing again to distribute evenly.

Chill and Serve: For the best flavor, let the salad chill in the refrigerator for about 15-30 minutes before serving. Garnish with fresh cilantro leaves if desired.
