8 oz (225g) rotini or fusilli pasta

1 cup cherry tomatoes, halved

8 oz (225g) fresh mozzarella balls, halved or diced

1 cup fresh basil leaves, torn

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 clove garlic, minced

Salt and pepper to taste

Optional: freshly grated Parmesan cheese for garnish

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the rotini or fusilli according to the package instructions until al dente. Drain and rinse under cold water to cool.

Combine Ingredients: In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, mozzarella balls, and torn basil leaves.

Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper.

Toss the Salad: Pour the dressing over the pasta mixture and toss gently until everything is well coated.

Taste and Adjust: Sample the salad and add more salt or pepper as needed. If you like a stronger flavor, consider adding extra balsamic vinegar.

Serve or Chill: You can serve the salad immediately, or refrigerate it for about 30 minutes to let the flavors meld together. If desired, sprinkle freshly grated Parmesan cheese before serving.
