Ingredients
  

1 lb boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

4 cups chicken broth

1 small onion, chopped

2 cloves garlic, minced

1 bell pepper, chopped (any color you prefer)

1 tablespoon olive oil

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, avocado, cilantro, lime wedges

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until the onion becomes translucent, about 5 minutes.

    Add the minced garlic to the pot and cook for another minute until fragrant.

      Pour in the chicken broth, then add the diced tomatoes, black beans, corn, and taco seasoning. Stir to combine.

        Add the chicken breasts to the pot, ensuring they are submerged in the broth. Bring the mixture to a boil, then reduce the heat to a simmer.

          Cover the pot and let it cook for 20 minutes or until the chicken is cooked through (internal temperature should be 165°F / 75°C).

            Remove the chicken from the pot and shred it using two forks. Return the shredded chicken back to the soup, stirring to combine.

              Taste and season with salt and pepper as needed. Let the soup simmer for an additional 5 minutes to allow the flavors to meld.

                Serve hot, garnishing with your choice of toppings such as shredded cheese, sour cream, diced avocado, fresh cilantro, and a squeeze of lime juice for extra zest.
