2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 tablespoon chipotle ranch seasoning (store-bought or homemade)

4 large flour tortillas

1 cup cooked rice (white, brown, or cilantro-lime)

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 cup lettuce, shredded

1 large tomato, diced

1 avocado, sliced

½ cup chipotle ranch dressing (for drizzling)

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a mixing bowl, coat the chicken breasts with olive oil and chipotle ranch seasoning. Ensure the chicken is evenly covered. Marinate for at least 30 minutes (or up to 2 hours for greater flavor).

    Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated chicken breasts. Grill for about 6-7 minutes per side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C). Once done, remove from the grill and let it rest for 5 minutes.

      Slice the Chicken: After resting, slice the grilled chicken into thin strips.

        Assemble the Burrito: On each flour tortilla, layer a scoop of rice, a couple of spoonfuls of black beans, corn, a handful of shredded cheese, lettuce, diced tomatoes, sliced avocado, and the grilled chicken strips.

          Add Dressing: Drizzle with chipotle ranch dressing to taste.

            Wrap It Up: Fold the sides of the tortilla over the filling, then roll from the bottom up to create a burrito. Make sure to tuck in the sides as you roll.
