2 boneless, skinless chicken breasts

1/4 cup chipotle ranch dressing (store-bought or homemade)

2 teaspoons olive oil

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

4 large flour tortillas

1 cup cooked white or brown rice

1 cup black beans, rinsed and drained

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese

1 avocado, sliced

1 cup fresh cilantro, chopped

Lime wedges for serving

Marinate the Chicken: In a mixing bowl, combine the chicken breasts with chipotle ranch dressing, olive oil, garlic powder, chili powder, salt, and pepper. Ensure the chicken is well-coated. Let it marinate for at least 30 minutes, or up to 2 hours for more flavor.

    Grill the Chicken: Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess. Grill the chicken for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let the chicken rest for 5 minutes before slicing.

      Prepare the Tortillas: While the chicken is resting, warm the flour tortillas on the grill for about 30 seconds on each side, or until soft and pliable.
