Ingredients
  

1 cup cottage cheese (preferably low-fat or full-fat)

1 medium avocado, diced

1 cup cherry tomatoes, halved

½ cup black beans, rinsed and drained

½ cup corn (fresh, frozen, or canned)

1 small red onion, finely chopped

1 jalapeño, deseeded and minced (optional for heat)

½ teaspoon cumin

½ teaspoon chili powder

Salt and pepper to taste

Fresh cilantro leaves for garnish

Lime wedges for serving

Tortilla chips or soft tortillas (optional for serving)

Instructions
 

In a medium mixing bowl, combine the cottage cheese with cumin, chili powder, salt, and pepper. Stir well until the spices are evenly distributed throughout the cottage cheese.

    In a separate bowl, combine the diced avocado, cherry tomatoes, black beans, corn, red onion, and minced jalapeño. Gently toss until mixed. Season with a little salt and pepper to taste.
