Ingredients

8 oz linguine pasta

2 tbsp unsalted butter

1 lb boneless, skinless chicken breasts, cubed

1 tbsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp cayenne pepper (adjust for spice preference)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

2 cups fresh spinach

¼ cup heavy cream

½ cup crumbled feta cheese

2 tbsp fresh parsley, chopped (for garnish)

Zest of 1 lemon

Juice of ½ lemon

Instructions

Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside.

Prepare the Chicken: In a large skillet over medium heat, melt the butter. Add the cubed chicken and season with smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally until the chicken is browned and cooked through.

Add Vegetables: Stir in the halved cherry tomatoes and fresh spinach. Cook for an additional 2-3 minutes, until the spinach wilts and the tomatoes begin to soften.

Make the Sauce: Reduce the heat to low, then add the heavy cream, stirring to combine. Allow the mixture to simmer gently for 2-3 minutes until slightly thickened.

Combine with Pasta: Add the cooked linguine to the skillet, tossing everything together until the pasta is well coated in the cowboy butter sauce. If the pasta seems dry, add a splash of reserved pasta water.

Finish It Up: Remove from heat; stir in the crumbled feta cheese, lemon zest, and lemon juice to brighten the flavors. Adjust seasoning if necessary.

Serve: Garnish with fresh parsley before serving. Enjoy your Easy Cowboy Butter Chicken Linguine warm!
