14 oz firm tofu, drained and crumbled

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 teaspoon ginger, grated

1 red bell pepper, diced

1 teaspoon ground turmeric

1 tablespoon curry powder

1 teaspoon cumin

1/2 teaspoon chili powder (optional, for heat)

Salt and pepper, to taste

1 cup spinach or kale, chopped

2 green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish, optional)

Instructions
 

Prepare the Tofu: In a medium bowl, crumble the firm tofu with your hands or a fork until it resembles scrambled eggs. Set aside.

    Sauté the Aromatics: Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until soft.

      Add Garlic and Ginger: Stir in the minced garlic and grated ginger; cook for an additional minute until fragrant.

        Add Bell Peppers: Toss in the diced red bell pepper and cook for 2-3 minutes until softened.

          Season: Sprinkle in the ground turmeric, curry powder, cumin, chili powder (if using), and season with salt and pepper. Stir to coat the vegetables evenly in spices.

            Incorporate Tofu: Add the crumbled tofu to the skillet, mixing everything together thoroughly. Cook for about 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden.

              Add Greens: Stir in the chopped spinach or kale and cook for another 2 minutes, just until the greens wilt.

                Serve: Remove from heat and garnish with sliced green onions and fresh cilantro if desired.
