Ingredients

1 cup fresh pineapple, diced

1 cup strawberries, hulled and quartered

1 cup kiwis, peeled and sliced

1 cup blueberries

1 banana, sliced

1/4 cup shredded coconut

1/4 cup walnuts, chopped (optional)

2 tablespoons honey (or maple syrup)

Juice of 1 lime

Fresh mint leaves for garnish

Instructions

In a large mixing bowl, combine the diced pineapple, quartered strawberries, sliced kiwis, blueberries, and banana.

Gently toss the fruits to mix them evenly, taking care not to mash any of the softer fruits like bananas.

In a separate small bowl, whisk together the honey (or maple syrup) and lime juice until well blended.

Pour the honey-lime dressing over the fruit mixture and toss gently to coat all the fruits.

Add the shredded coconut and chopped walnuts (if using) and fold them into the salad for added texture.

Let the fruit salad sit for about 10 minutes to allow the flavors to meld together.

Serve chilled and garnish with fresh mint leaves for a refreshing touch.
