Ingredients
  

  • 1 pound fresh green beans trimmed and cut into 2-inch pieces
  • 1 cup sliced button or cremini mushrooms
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 cup creamy sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 can condensed cream of mushroom soup
  • 1 cup crispy fried onions for topping
  • Salt and freshly ground black pepper to taste

Instructions

  • Preheat your oven to 350°F (175°C).
  • Blanch the green beans in salted boiling water for 3-4 minutes, then drain.
  • Sauté diced onion and minced garlic in olive oil until translucent.
  • Add sliced mushrooms to the skillet and cook until softened.
  • Combine sautéed mixture with blanched green beans, sour cream, soup, and half the cheddar cheese.
  • Season with salt and pepper, then pour into a greased baking dish.
  • Top with remaining cheddar cheese and crispy fried onions.
  • Bake for 25-30 minutes until bubbly and golden brown.
  • Let cool for a few minutes before serving.
