Ingredients
  

For the Chicken Skewers:

1 lb boneless, skinless chicken thighs (cut into 1-inch pieces)

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice

2 cloves garlic (minced)

1 teaspoon ground coriander

1 teaspoon turmeric powder

1 teaspoon black pepper

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup soy sauce

2 tablespoons lime juice

1 tablespoon honey or maple syrup

1 tablespoon sriracha (adjust for spice preference)

1/4 cup water (to thin the sauce)

2 cloves garlic (minced)

Chopped peanuts and fresh cilantro for garnish

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine soy sauce, fish sauce, brown sugar, lime juice, minced garlic, ground coriander, turmeric powder, and black pepper. Mix well until the sugar dissolves.

      - Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (up to 4 hours for more flavor).

        Prepare the Peanut Sauce:

          - In a small mixing bowl, whisk together the peanut butter, soy sauce, lime juice, honey (or maple syrup), sriracha, minced garlic, and water until smooth. Adjust the consistency by adding more water if needed. Taste and adjust the seasoning, adding more lime juice or sriracha to suit your preference.

            Assemble the Skewers:

              - Preheat your grill to medium-high heat. If using a grill pan, place it over medium-high heat.

                - Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece to ensure even cooking.

                  Grill the Skewers:

                    - Place the chicken skewers on the grill and cook for about 5-7 minutes on each side or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

                      Serve:

                        - Remove the skewers from the grill and let them rest for a couple of minutes.
