2 cups rolled oats

1 cup pecans, chopped

1/2 cup almonds, sliced

1/2 cup unsweetened coconut flakes

1/2 cup maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dried cranberries or raisins (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    In a large bowl, combine the rolled oats, chopped pecans, sliced almonds, unsweetened coconut flakes, cinnamon, and salt. Mix well.

      In a separate small bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until smooth.

        Pour the liquid mixture over the dry ingredients and stir until all the oats and nuts are evenly coated.

          Spread the granola mixture onto the prepared baking sheet in a single layer, pressing it down firmly.

            Bake in the preheated oven for about 25-30 minutes, stirring halfway through, until golden brown.

              Once done, remove from the oven and let it cool completely. Add the dried cranberries or raisins if using, and mix well.

                Store in an airtight container at room temperature for up to two weeks.
