1 cup cooked breakfast sausage, crumbled (or use any preferred protein)

1 small red bell pepper, diced

1 small green bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon cumin

Salt and pepper to taste

4 large eggs

½ cup shredded cheddar cheese (or your favorite cheese)

¼ cup fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large skillet, heat 1-2 tablespoons of olive oil over medium heat. Add the diced potatoes and cook for about 10-15 minutes, stirring occasionally, until they are golden brown and tender. Season with salt, pepper, smoked paprika, and cumin.
