1 cup granulated sugar

1/4 cup light corn syrup

1/4 cup water

1 tsp vanilla extract

2 large egg whites

1/4 tsp cream of tartar

1/2 cup semi-sweet chocolate chips

1 tbsp coconut oil (or butter)

12 large marshmallows

1/4 cup crushed graham crackers (optional, for coating)

Instructions
 

Prepare the Foil Pans: Line an 8x8 inch baking dish with foil and lightly spray it with cooking spray for easy removal. Set aside.

    Make the Marshmallow Base: In a medium saucepan, combine the granulated sugar, corn syrup, and water over medium heat. Stir until the sugar is completely dissolved. Bring the mixture to a boil and stop stirring. Use a candy thermometer to heat until it reaches 240°F (soft ball stage).

      Whip Egg Whites: While the sugar mixture is heating, place the egg whites and cream of tartar in a large mixing bowl. Whip them on medium speed until soft peaks form.

        Combine Mixtures: Once the sugar syrup reaches 240°F, remove it from the heat. With the mixer on low speed, carefully pour the hot syrup into the egg whites in a slow, steady stream. Increase the mixer speed to high and beat until the mixture is thick and glossy, around 5-7 minutes. Stir in the vanilla extract.

          Layer the Marshmallow: Pour half of the marshmallow mixture into the prepared baking dish, spreading it out evenly. Place the large marshmallows on top in a single layer, then spread the remaining marshmallow mixture over them. Smooth the top with a spatula.

            Cool and Set: Allow the mixture to cool at room temperature for at least 4 hours (or overnight) until fully set.

              Prepare the Chocolate Coating: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat in 30-second intervals, stirring in between, until melted and smooth.

                Cut and Dip: Once the marshmallows are set, lift them out of the baking dish using the foil. Cut them into squares. Dip each square into the melted chocolate, ensuring they’re completely coated. If desired, roll them in crushed graham crackers for a delightful crunch.

                  Let Cool: Place the chocolate-coated Scotchmallows on a parchment-lined baking sheet to set. Allow the chocolates to cool completely at room temperature or refrigerate for faster setting.

                    Serve and Enjoy: Once the chocolate is firm, they are ready to serve! These treats can be stored in an airtight container at room temperature for up to a week.
