20 jumbo pasta shells

1 cup ricotta cheese

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg, beaten

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the pasta shells according to the package instructions until al dente, then drain and set aside to cool slightly.

      In a large mixing bowl, combine the ricotta cheese, chopped spinach, half of the mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, salt, and black pepper. Mix well until fully combined.

        Stuff each shell with the cheese and spinach mixture, using a spoon to pack it in gently.

          Spread 1 cup of marinara sauce evenly across the bottom of a large baking dish.

            Arrange the stuffed shells in the baking dish, open side up.

              Pour the remaining marinara sauce over the top of the shells, ensuring they are well coated.

                Sprinkle the remaining mozzarella cheese over the top for a cheesy layer.

                  Cover the dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes.

                    Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                      Once done, remove from the oven and let it cool for a few minutes.

                        Garnish with fresh basil leaves if desired, then serve warm and enjoy your delightful healthy veggie dinner!
