Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

12 jumbo pasta shells

2 cups ricotta cheese

1 cup fresh spinach, chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat oven to 375°F (190°C).

    Cook the pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

      In a large bowl, combine ricotta cheese, chopped spinach, half of the mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly blended.

        Stuff each cooked jumbo shell with about 2 tablespoons of the ricotta and spinach mixture. Gently press the filling to ensure it's packed in.

          Spread a layer of marinara sauce over the bottom of a 9x13 inch baking dish. Arrange the stuffed shells in a single layer on top of the sauce.

            Pour the remaining marinara sauce over the stuffed shells, ensuring that they’re well covered. Sprinkle the remaining mozzarella cheese on top.

              Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

                Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.

                  Garnish with fresh basil leaves before serving. Enjoy your healthy veggie dinner!
