Easy Spinach & Ricotta Stuffed Shells

20 jumbo pasta shells

2 cups ricotta cheese

1 cup shredded mozzarella cheese, divided

1 cup grated Parmesan cheese

2 cups fresh spinach, chopped

1 cup marinara sauce

1 egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon dried oregano

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of boiling salted water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, ½ cup mozzarella cheese, ½ cup Parmesan cheese, chopped spinach, beaten egg, garlic powder, onion powder, salt, black pepper, and dried oregano. Mix until well combined.

        Stuff the Shells: Using a teaspoon or small cookie scoop, fill each cooked pasta shell with the ricotta and spinach mixture.

          Arrange in Baking Dish: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Place the stuffed shells in the dish, seam side up. Pour the remaining marinara sauce over the shells, and sprinkle the rest of the mozzarella and Parmesan cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Once baked, remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve hot and enjoy your delicious Spinach & Ricotta Stuffed Shells!
