6 large eggs

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon chopped fresh dill

1 tablespoon lemon juice

2 tablespoons finely chopped red onion

1/4 cup finely chopped celery

Salt and pepper, to taste

4 slices of whole grain bread

Lettuce leaves (optional)

Tomato slices (optional)

Boil the Eggs: Place the eggs in a saucepan and cover them with water. Bring to a boil over medium-high heat. Once boiling, cover the pan, turn off the heat, and let the eggs sit for about 10-12 minutes.

    Cool the Eggs: After the resting time, transfer the eggs to a bowl of ice water to cool for at least 5 minutes. This helps make peeling easier.

      Peel and Chop: Once cool, peel the eggs and chop them into small pieces.

        Make the Dressing: In a large mixing bowl, combine the mayonnaise, Dijon mustard, chopped dill, lemon juice, red onion, and celery. Stir until well mixed.

          Combine Ingredients: Gently fold the chopped eggs into the dressing mixture. Season with salt and pepper to taste.
